03 - 1 can (14 oz) diced tomatoes with juices

# Method:

01 - Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3 to 4 minutes until softened and translucent.
02 - Incorporate the minced garlic and cook for 1 minute until fragrant.
03 - Stir in the rinsed rice and toast for 1 to 2 minutes until the edges turn slightly translucent.
04 - Add diced tomatoes with their juices, vegetable broth, salt, black pepper, and oregano. Stir thoroughly to combine all ingredients.
05 - Bring the mixture to a boil, then reduce heat to low. Cover and simmer gently for 18 to 20 minutes until the rice is tender and liquid absorbed.
06 - Remove from heat and keep covered to rest for 5 minutes. Fluff the rice with a fork before serving.
07 - Optionally, sprinkle fresh parsley on top and serve warm.
