07 - 1/3 cup mayonnaise
08 - 2 tablespoons Greek yogurt
09 - 1 teaspoon Dijon mustard
10 - 1 teaspoon honey
11 - 1 tablespoon lemon juice
12 - Salt and pepper, to taste
→ For Serving
13 - 6 large lettuce leaves (butter lettuce or romaine)
14 - Fresh parsley or dill, chopped (optional)
# Method:
01 - In a large bowl, mix the chicken, celery, grapes, cranberries, nuts, and spring onions until evenly distributed.
02 - Whisk together mayonnaise, Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper in a small bowl until smooth.
03 - Pour the dressing over the chicken mixture and gently toss to coat all ingredients evenly.
04 - Taste the salad and adjust salt and pepper as preferred.
05 - Spoon equal portions of the chicken salad into each lettuce leaf to create individual cups.
