A fun, tangy snack featuring crisp pickles and creamy cheese, all wrapped in a soft tortilla & perfect for parties, picnics, or a quick bite.

When I first made these pickle-in-a-blanket snacks, they disappeared from the platter in minutes at our family picnic. The creamy cheese and tart pickle tucked into a soft tortilla got enthusiastic thumbs-up from kids and adults alike.

Ingredients

  • Flour tortillas: 4 large (8-inch)
  • Dill pickles: 4 large, whole
  • Cheddar cheese: 4 slices (or Swiss)
  • Cream cheese: 4 oz (115 g), softened
  • Fresh dill: 2 tbsp, chopped (optional)
  • Red onion: 1 tbsp, finely diced (optional)
  • Yellow mustard: 1 tbsp (optional)

Instructions

Prepare tortillas:
Lay out the tortillas on a clean surface.
Spread cream cheese:
Spread 1 oz of softened cream cheese evenly over each tortilla.
Add sliced cheese:
Place a slice of cheddar cheese in the center of each tortilla.
Add extras (optional):
If using, sprinkle chopped dill and red onion over the cheese, and drizzle with mustard.
Add pickle:
Place one whole dill pickle at the edge of each tortilla.
Roll up:
Roll up the tortilla tightly around the pickle, ensuring all filling is enclosed.
Slice or serve whole:
Slice each roll into 1-inch pieces or serve whole as desired.
