14 - 1/2 small red onion, thinly sliced, optional

# Method:

03 - In a small bowl, whisk together Dijon mustard, honey, mayonnaise, lemon juice, and a pinch of salt and pepper until well combined.
04 - Warm the tortillas for a few seconds in a dry skillet or microwave to make them pliable and easier to roll.
05 - Lay each tortilla flat. Spread a generous spoonful of honey-mustard dressing down the center. Top with lettuce, chicken, tomato, and red onion if using.
06 - Drizzle additional honey-mustard dressing over the fillings.
07 - Fold the sides of the tortilla inward, then roll up tightly from the bottom to form a secure wrap.
08 - Slice wraps in half and serve immediately.

# Expert Advice:

01 -
  • Everything cooks in one skillet and comes together in the time it takes to set the table.
  • The honey mustard is tangy and just sweet enough to make even picky eaters happy.
  • You can wrap them tight and eat with your hands, no plates or forks required.
  • Leftovers actually taste better the next day when the flavors soak into the tortilla.
02 -
  • Do not skip resting the chicken after cooking, those two minutes let the juices settle so they do not run out when you slice.
  • Warm tortillas are non negotiable, cold ones crack and make rolling frustrating and messy.
  • If your dressing feels too thick, add a teaspoon of water or lemon juice to loosen it up.
03 -
  • Use a cast iron skillet if you have one, it holds heat evenly and gives the chicken a better crust.
  • Double the honey mustard and keep the extra in the fridge, it is amazing on sandwiches and salads all week.
  • If the wrap feels too full to roll, pull out a little filling and save it for a salad the next day.
