# What You'll Need:
→ Bread
01 - 6 thick slices brioche or challah bread, cut into 1-inch cubes
→ Custard Mixture
02 - 3 large eggs
03 - 1 cup whole milk
04 - 1 tablespoon granulated sugar
05 - 1 teaspoon pure vanilla extract
06 - 1/2 teaspoon ground cinnamon
07 - Pinch of salt
→ Coating
08 - 1/2 cup packed brown sugar
09 - 1 teaspoon ground cinnamon
→ For Cooking
10 - 2 tablespoons unsalted butter
# Method:
01 - In a medium mixing bowl, whisk together eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until thoroughly incorporated.
02 - Add brioche or challah cubes to the custard and toss gently, ensuring all sides are coated. Allow to soak for 2 to 3 minutes without becoming mushy.
03 - In a shallow dish, blend the packed brown sugar with ground cinnamon; set aside for coating.
04 - Heat 1 tablespoon butter in a large nonstick skillet over medium heat until sizzling. Arrange half the soaked bread cubes in a single layer and cook, turning with a spatula until golden and crisp on all sides, about 5 minutes. Repeat with remaining butter and bread cubes.
05 - Immediately toss the hot bites in the cinnamon brown sugar mixture until evenly coated.
06 - Serve the French toast bites warm. Accompany with maple syrup or fresh fruit if desired.
