# Method:
01 - Set oven to 425°F and line a baking sheet with parchment paper. Lightly coat with cooking spray.
02 - Wash the zucchinis thoroughly. Trim ends and cut into fries approximately 3-4 inches long and 1/2 inch thick.
03 - In a shallow dish, combine panko breadcrumbs, grated Parmesan, garlic powder, salt, and black pepper.
04 - Whisk eggs in a separate bowl until smooth.
05 - Dip each zucchini fry into the beaten eggs, then dredge in the panko-Parmesan mixture. Arrange coated fries in a single layer on the prepared baking sheet.
06 - Spray the top of the fries lightly with cooking spray. Bake for 20-25 minutes until fries are golden and crisp, flipping halfway through for even browning.
07 - Allow fries to cool for 2-3 minutes and serve immediately while hot.
